The Pandan Gula Melaka Cake: The Signature That Started It All

One cake has been on our counter since the very start, and after all these years it's still the one people order by name: the Pandan Gula Melaka cake. If Amour Desserts has a signature — the cake we'd want to be remembered for — this is it. Here's what's in it, and why it never came off the menu.

What's actually in it

Three things, each doing real work. Layers of pandan sponge — soft, fragrant, green from real pandan rather than a bottle of essence. Gula melaka cream cheese — the smoky Malaysian palm sugar folded through cream cheese, which is the part that makes people go quiet on the first bite. And a finish of toasted desiccated coconut, because pandan, gula melaka and coconut are a trinity that belongs together. It's the flavour of half the kueh we grew up on, rebuilt as a proper layer cake.

We keep it less sweet on purpose so the gula melaka's caramel-smoke leads instead of getting buried under sugar. That restraint is the whole point of it.

Why it became the signature

It wasn't a plan. We made the cake we wanted to eat — the flavours of home, in a format that works for a Melbourne birthday table — and it turned out a lot of people had been missing exactly that. For the Malaysian and Singaporean diaspora here it tastes like something they couldn't get anywhere; for everyone else, it's simply unlike any cake they'd tried. Word of mouth did the rest. It's been our most-requested cake for years, and it's the through-line for everything else we make.

The upgrade: when durian meets pandan

If the standard cake is the love letter, the Pandan Gula Melaka Durian Cake is the grand gesture. Same pandan sponge and gula melaka cream cheese, with real D24 durian running through it.
