I'm Er Rin, the baker behind Amour Desserts. We post to Brisbane every festival season, and Queensland is the state I think about hardest when packing.

Our mooncakes have no preservatives, so heat matters. We bake close to dispatch, pack for the warm run north, and send them out with time to spare — which is why the 6 September postage cutoff exists.

Mooncake Delivery in Brisbane: Sunshine Capital Celebrations

Queensland is the run I plan around most carefully. Heat and a preservative-free mooncake aren't natural friends, so Brisbane boxes go out insulated and early rather than at the last minute.

Most of them land in Sunnybank, which orders more from us than almost any single suburb in the country. Fortitude Valley and Inala follow, and we reach the rest of Greater Brisbane along with the Gold and Sunshine Coasts.

You do have one advantage over the southern states: September evenings up there are warm enough to eat outside, which is how these were meant to be eaten in the first place.

Brisbane is the only city where Taiwanese 3Q outsells the traditional boxes. After that it's traditional lotus paste with single yolk, then mixed nuts, then Shanghai-style with red bean paste.

The less-sweet recipe matters more here than anywhere else we post to. A very sweet mooncake turns cloying fast in the heat, and Queensland customers are usually the first to tell us so.

Year after year, 3Q is the flavour Brisbane orders more of than anywhere else we post to. Red bean paste with pork floss: sweet, salty, chewy, all in one bite.

Customers who grew up near Taiwanese bakeries tell us it's the closest thing they've found here. Everyone else just orders a second box.

Classic Traditional Mooncakes

The classics are the reason most people order at all. Our lotus paste is cooked down slowly and kept less sweet than the commercial boxes — which matters more than people expect in Queensland heat, where a very sweet mooncake gets cloying fast.

There's red bean, pineapple lotus with a tropical tang that suits Brisbane, double yolk for the yolk lovers, and mixed nuts — still a Brisbane favourite, whatever the young ones say about it.

Flaky spiral pastry wrapped around a whole salted egg yolk, with lotus paste or red bean inside.

The yolk should be rich and slightly grainy against the sweet paste — golden, never chalky. These are the ones people photograph when you cut them in half at the table.

Shanghai mooncakes swap the baked skin for a buttery shortcrust, filled with lotus paste or red bean paste.

Lighter to eat than a traditional skin, which is why they do well up north.
